Dark red colour, nose of berry jam. Medium weight with a solid backbone of cool climate (Ontario) acidity. Rounded with smooth tannin finish. Drink: Definitely drinkable in 2022 but will benefit with the passage of time as it comes further together with cellaring. 2022 – 2032+. Food Pairing: Lamb or pork chops with rosemary and sage & earthy roasted potatoes, or simply with aged cheddar cheeses.
